Birthday party success

The party was a success. We had just the right amount of food and everyone liked it. There is a small bit of quiche left over, but I will heat that up to serve with our chicken/bean/rice soup that is currently simmering away in the crockpot.

I am in a mental fog right now, so tomorrow I will add up the receipts and let you know how much it all cost. Honestly, I don't care if it cost $100... the birthday boy had a great time and it was way, way cheaper than other birthday party options for his age bracket. The food was all paid for out of our grocery budget, so it didn't cost anything extra.

As of right now, I have put us on a strict eating out of the pantry challenge for a week. I am getting a little rusty in my food $ stretching and creativity, so I think the best way to jog my memory is to force myself to do it. The freezer and pantry are getting low, but I think we can manage. I do need to pick up some fresh carrots and apples so that we have healthy snacks, but other than that, I have no plans to grocery shop. I will not sacrifice our health in the name of saving a few bucks. Trust me when I say that Alex and I are living proof that the right foods can mean the difference between a healthy, productive life and a life riddled with pain and poor health.

In other news, it is currently 26°F in Mississippi. As you can imagine, I am thrilled. I have no plans to leave the house until my Monday Weight Watchers meeting, and if the weather stays this crappy, might just hibernate until the next one.
